John Coffey and Jay Donaldson, along with their partners Jordan Larson Burbach and her husband Luke, are excited to announce the opening of Flatwater Bistro in the Historic Haymarket. Flatwater Bistro officially opened Wednesday, May 14th and hosted a Lincoln Chamber of Commerce ribbon cutting ceremony on May 21st. John and Jay have decades of experience in the food service industry with companies such as Valentino’s, Macaroni Grill, Grisanti’s, Applebee’s and Granite City. Flatwater Bistro opens at 6 am daily, with their coffee bar open at 6 am, and breakfast served at 7 am daily. Lunch and dinner served 8 am to close.
The Flatwater Bistro, located at 801 R Street in the Historic Haymarket, brings Lincoln a new taste of greatness with a variety of American, specialty and unique dishes, including vegetarian and gluten free options, served in a warm, comfortable and trendy environment, perfect for the haymarket.
