Marcy Hollenbeck and her family started their business, Hollenbeck Farms, by raising beef for friends and family just as a favor.  Four years go, when they recognized a huge need for good quality beef and a trend toward local, source verified, all natural beef, they decided to label their beef for retail sale.  They started in local farmers markets and continued to expand into retail stores, restaurants, and had a temporary holiday gifting location at Westfield Gateway mall.  Hollenbeck Farms retails and wholesales all natural beef, lamb and pork, sole individually at local farms markets, grocery stores and restaurants as well as offering nationwide shipping and local delivery.

Tell me a little about your family. – Jr and I have been married for 13 years.  We have three children. Emie is 9, Olivia is 7, and Ethan is 5.  We enjoy the kids’ activities and sporting events as a family and also have gotten to spend a lot of time together at farmers markets and festivals promoting our products.

What do you see as one of the biggest turning points in your life? – Having children changes everything.  As most parents would probably agree, it is crazy how almost all energy and effort shifts to our children’s physical and emotional needs. It is a tremendous responsibility, but so rewarding and so much fun!

What is your favorite thing to do on a day off? – I like to enjoy a day out with the kids and their friends doing activities they love.  I also like to have lunch and shopping trips with my girl friends.

What are you the most proud of? – My parents and the values that they have taught me.  They have always put their needs and time aside for everyone…They are very unselfish.  It has been a great example to me over the years and now to my children!

How would your friends describe you? – I am a foodie, full of energy, and always on the go!

What is your greatest talent that you don’t utilize in your daily work life? – I love to have parties…large or small!  I love to cook, bake, decorate and entertain.

If you could change one thing about yourself, what would it be? –  I wish I were much more computer savvy.  I really only learned the basics in college, which isn’t very useful these days!   When time permits I definitely would like to take some computer classes.

What is your favorite book or the last good book you read? –  I enjoy reading cooking and decorating magazines.  Other than that, I have not found reading enjoyable or relaxing. I’m not good at sitting still!

What is your favorite Lincoln restaurant? – I love to go out to eat!  My favorite restaurant for the last few years in Lincoln has been Venue.  I love their Crab Rangoon Dip, several of the pizzas, the Pecan Blue Salad, the Wedge, Chicken Roulade, and the Black and Bleu Strip Steak.  A new favorite is Capitol City Grill.  They are a new restaurant in town so I haven’t established my favorites dish as of yet.  The steak entrees were great!  Of course, it’s Hollenbeck beef they use!

If you could have dinner with one famous person from the past or present, who would it be? –  Kelly Ripa, I think she would be so fun!  I love her energy and how real she is.   I’m sure she would know the best places to eat, and maybe I’d meet some stars!  We could even invite our families since she is into that as well.
