Tell us a little about your business. – I am a unique food trailer experience and catering event center, serving a variety of delicious sweet and savory crepes. My business is called Crepe Café (Crepe-Cafe.com).

How did you get started in the business? – In 2016 while working for Nebraska State Penitentiary, I wanted to change things and challenge myself to own a business offering customers a unique, quality product. I heard about a place called Crepe A La Cart in Breckenridge, CO that had delicious crepes. I took a trip out there and tried them. They were delicious which is when I decided I wanted to start a food truck in Lincoln.

What is the biggest challenge you’ve faced professionally? – Marketing a niche, unique product while perfecting the crepe recipe.

What has been your most important achievement professionally? – Fostering business relationships and offering customers an appealing menu for everyone.

Tell us a little about your family. – My mother lives in Washington State where she remarried in her 70’s. My dad passed away in 2025 in the state of California, that he loved and where I was born and grew up. My brother is married and lives in Utah. I have a son who lives in South Carolina who has two amazing kids. His daughter is 2 and his son is 1. I love getting to know them as their grandpa. My daughter lives in Chicago and my youngest son lives in Portland, Oregon.

What do you see as one of the biggest turning points in your life? – The day I joined the military in 1988 and served in the Air Force and Army for 25 years.

What is the most unique or interesting thing about you that most people probably don’t know? – I traveled all over the world with the military as well as a kid from divorced parents. I worked with the Department of Corrections in Nebraska for 10 years with a variety of jobs from corrections officer to case manager. I also worked for the state of Nebraska with the Youth Rehabilitation Treatment Center.

Who inspires you? – God and my relationship with Him; he encourages me to serve others and be helpful. Other entrepreneurs such as Aron Young with ChefauChef also inspire me.

What is your favorite quote or the best piece of advice you’ve ever received? – “Treat others the way you would like to be treated” and “you get out of life what you put into it.”

If you had a theme song, what would it be? – “I’m Still Standing” by Elton John.

If you could have a super power, what would it be? – Teleportation so I could travel the world.

What is your greatest talent that you don’t utilize in your daily work life? – My greatest talent is being helpful and serving others.

If you could choose any other profession to be successful in, what would it be? – I would like to be a meteorologist and perfect the skills I had in the Air Force.

What local nonprofit organization(s) are you passionate about or involved with, and are there any special reasons why? – Regina Peterson with Marvilee (Marvilee.org) helps youth in dealing with life and KB who owns Visionary Youth also helps young kids to be inspired and encouraged in life.

If you could have dinner with one famous person from the past or present, who would it be? – Abraham Lincoln or Ronald Reagan.
