It all started with a new restaurant concept that came about “in the blink of an eye.” Local entrepreneur Kevin Knudson teamed up with Mark Creglow to bring fast, casual dining to the old Brix and Stone gastropub space in the Haymarket. BLINK! will be opening this fall, and is located directly between Barry’s Bar and Grill and Nebraska Gift Shop.
The deli-style gourmet menu will be complete with options for those that have a taste for finer dining as well as for those who enjoy simple casual food. With football season quickly approaching, BLINK! is expected to be a place to gather with friends to enjoy the Husker festivities. Light sandwiches and easy to serve menu options will be key to providing a game day meal that will delight those of all ages and purposes.
BLINK! is a place to wake up with the finest coffees, teas or smoothies and wind down with a glass of wine, specialty beer or sangria. Local businesses will be happy to know BLINK! will offer full service catering for lunches and corporate events. It will also be the perfect alternative for on-the-go local employees looking for a pick-me-up on their morning and afternoon breaks. Implementing the latest technology, BLINK! guests may choose to preorder and prepay using their smartphones and computers.
