Cowboy Chicken Celebrates Grand Opening of New Lincoln Location
Cowboy Chicken (cowboychicken.com) has officially made its debut in Lincoln, with the recent opening of the first Lincoln franchise. To celebrate, Cowboy Chicken hosted a ribbon cutting with the Lincoln Chamber of Commerce on November 9th.
Cowboy Chicken is a unique, fast-casual restaurant concept featuring its specialty fare, wood-fired rotisserie chicken. With a selection of 16 sides to accompany your chosen entrée, 14 of which are made from scratch in-house, Cowboy Chicken is focused on fresh fare and fantastic service. In addition to individual platters, the menu offers a selection of family meals, sandwiches and salads, and even a Tex-Mex twist with its famous chicken enchiladas and tacos. The restaurant is open from 11 a.m. to 9 p.m. seven days a week and currently accommodates 84 dine-in guests, with an outdoor patio set to open in the spring that will seat an additional 16 patrons. Cowboy Chicken also offers online ordering, delivery and catering services.
The new Lincoln location is the first Cowboy Chicken franchise outside of the state of Texas, where it originated in 1981. Owners Randy Mutchie, Joe Armstrong and Brian Eichelberger plan to expand to a projected total of seven restaurants across Nebraska and Kansas over the next few years, with their sights set on the Omaha and Kansas City markets.
