With its focus on preparing fresh, chef-driven dishes with locally sourced and grown ingredients, the Hub Café (www.hubcafelincoln.com) has been a mainstay for the downtown Lincoln breakfast, brunch and lunch scene since 2016. Doug Dittman and Krista Dittman opened the Hub to showcase local farmers and growers in the area, as well as to highlight Lincoln’s amazing network of trails, serving as a “hub” for both endeavors.

This past July of 2023, the Hub was purchased by Jacob Thiessen and his wife, Crystal Bock Thiessen. Jacob has been the Executive Chef of the Hub Café since 2018, starting as the Sous Chef when the café first opened. He came to The Hub from his cousins’ bakery, Le Quartier Bakery & Café – Omaha/Lincoln, where he had been the head baker since 2011. Before that, he managed a kitchen in Sapporo, Japan for three years, having moved there with Crystal from another executive chef position in Warrensburg, MO. Altogether, Chef Jake has 24 years in the restaurant and food service industry. He has been a driving force behind the dishes on the menu at the Hub, where you can find everything from comfort foods such as French toast and loaded golden biscuit breakfast sandwiches, to huevos rancheros and Korean-inspired chicken bulgogi tacos. He’s added a weekly Friday pizza and pints night (5-9 p.m.) recently as well.

His wife, Crystal, teaches English as a second language at the University of Nebraska-Lincoln and helps train English teachers in other countries as a U.S. Department of State English Language Specialist.
