Star City 6: Matt Skibicki

Located at 2801 Pine Lake Road, Suite B, Teriyaki Madness is one of the newest additions to the Lincoln dining scene. Matt Skibicki is the owner of the Teriyaki Madness Lincoln franchise.

Tell us a little about your business. – We are a Teriyaki Shop! Amongst many other items like Katsu Chicken or Orange Chicken, our specialty is Teriyaki Chicken or Beef with Rice or Yakisoba Noodles for a base and stir-fry or steamed veggies for a side.

How did you get started in the business? – I am into fitness and leading a healthy lifestyle so chicken and rice have– always been a staple in my diet. Therefore I wanted to open a restaurant that served this type of food and Teriyaki Madness fit the bill perfectly. The combination of chicken, rice, and veggies is one of the healthiest meals you can eat!

What is the biggest challenge you’ve faced professionally? – So far it’s been finding out what my demographic is and how to effectively market to them. It’s quite the challenge to get the word out to everyone that we are here!

What has been your most important achievement professionally? – Building a great reputation in a short amount of time. Word of mouth is priceless in this industry.

Tell us a little about your family. – I am a divorced father of one who shares custody with a wonderful woman in my sons’ mother. I also am in an amazing relationship with the strongest, most supportive woman I’ve ever been lucky enough to have met. She takes care of me and gives me great advice in management as she has a large amount of experience managing a bank with UBT. She also cares for my son as he is her own, and that’s very special to me. I am a very blessed man!

What do you see as one of the biggest turning points in your life? – When I held my son after he was born. In that moment I decided that I needed to make a change in my life in order to have a schedule that would allow me to be there for all of his events growing up and afford me the most time to raise him the best that I can.

What is the best piece of advice you’ve ever received? – It came from my paramedic professor (Ryan Batenhorst) while I was working on getting my degree in para-medicine. We were all in class at the beginning of the program and he said “Get comfortable with being uncomfortable.” I did not quite understand what that meant when he first said it but I soon learned and now it is something that has intertwined itself in almost every aspect of my life.

What local non-profit organization(s) are you passionate about or involved with, and are there any special reasons why? – Supporting our community and giving back are very important to us. We’ve already held a fundraiser for Men With Dreams and donated to Footsteps, St. Baldricks, charities that help families in the ICU, charities that offer victims of disaster free food, the Food Bank of Lincoln drive, and others. We also give discounts to first responders and veterans as a way for us to show them our appreciation.

What is your favorite local restaurant? – Aside from Teriyaki Madness, it’s Super Taco on 56th and Holdrege. I know the owners and they are very nice, hard-working people and their food is beyond amazing!
