The Stamp Collector

Vic’s Pizza (pizzavics.com) has taken over the Sebastian’s Table space with their trademark reimagining of pizza offerings. Our team was able to get a first-look, or rather first-taste, of these innovative recipes. Of Vic’s seven signature pizzas, we tried four—each one delivering something different than the last. We enjoyed The Stamp Collector. This pizza puts all other meat lover’s pizzas to shame with Vic’s yummy house red sauce, mozzarella, pepperoni, Italian sausage, meatballs, smoky mushrooms, black olives, and caramelized onions. Underneath the toppings, the Roasted Garlic Cream Cheese is the secret sauce that brings it all together. Fun fact about the name of this pizza: Vic, the grandpa of owner-cousin duo Erik Hustad and Gabe Lovelace and the restaurant’s namesake, had an enthusiastic love for collecting stamps. He believed each one had a story to tell! Another fun fact: Eleanora, the cocktail bar connected to Vic’s Pizza, is named after Erik’s and Gabe’s grandmother.

Nebraska Pizza Massacre

The next pizza we tried was the Nebraska Pizza Massacre. The list of ingredients might raise eyebrows, especially the peanut butter sauce, but we were delighted with the unusual combination. It really embodies the Nebraska spirit with the use of sweet corn, paired with mozzarella, broccoli, sweet potato fries, red onion, pickled apples, and cornbread streusel.

Breakfast for Mr. Jones

 

The big crowd pleaser was the Breakfast for Mr. Jones pizza. It’s already getting the reputation for the best breakfast pizza in town! We really liked the white sauce it’s made with, which is a “wonderfully seasoned rich country gravy, similar to Alfredo without the added cheese.” Breakfast for Mr. Jones also features breakfast sausage, bacon, scrambled eggs, mozzarella, sharp cheddar, and tater-tots.

BBQ Chicken Obligation

Vic’s Pizza’s corporate chef, Justin Fullerton, put a delicious spin on the BBQ Chicken Obligation as well with its smoked gouda and fried chicken nuggs. It would be hard to get sick of this one because of how fresh it is. The secret? Vic’s ensures its dough ferments for three days to achieve the most flavorful results. All of the pizzas on the menu are heighten by this fresh, thick, and chewy dough. The bread that Vic’s doesn’t use at the end of the day is donated to the Food Net.

 

Boneless Wings

To give patrons a nice variety, Vic’s Pizza also has boneless wings on the menu. There are currently eight kinds to choose from. We highly recommend the Magik Sauce Wings. These are nicely laced with a cilantro spiced sweet chile, which gives them that perfect balance between sweet and savory. You can’t find other wings like this in Lincoln—it’s a chef’s special! We tip our hats to you, Justin. The other flavors include traditional buffalo, honey buffalo, ghost buffalo (for those of you who enjoy pain), brown sugar BBQ, spicy BBQ, Jamaican jerk, and creamy garlic parmesan (an editor’s favorite). They also have naked wings.

To round out your dining or to-go ordering experience at Vic’s Pizza, you can select one of their mouth-watering breadsticks and/or a salad. There are housemade dipping sauces and dressings to choose from as well. For those of you who are still mourning Sebastian’s Table, you’ll be happy to know that Vic’s Pizza kept the famous red and white Sangrias, which can be ordered to-go! There are 6-packs of beer and coke products available too.
